“Bake with love..”
― Manuela Kjeilen

My sister and I were treated to a day with our Mum at River Cottage today (you know, the place where the River Cottage cooking series is filmed) learning how to bake cakes and desserts! So we began an early morning trek down to Devon enjoying the absolutely breath-taking scenery on the way there…

Once there the views got even better. I’ve never been to Devon before and it’s only a couple of hours down the road… so I’ll be revisiting sometime very soon with my ‘proper’ camera.

Everything about the day from start to finish was perfectly organised and amazing. Photographs were encouraged, wandering around and looking at things was encouraged and we even got to glimpse inside the cottage where they usually do the filming…

We were plied with home-made goods in between tasting our own, drinking cordial, tea and coffee. We made muffins, loaf cake, profiteroles and chocolate tart (from scratch!)

At lunchtime we were served delicious home-made steak pie, mashed potatoe and carrots. And if that wasn’t enough we had tasters afterwards of some of the things we’d been baking.

The best bit was the view. What an inspiring view.. all day we had this gorgeous landscape to look out onto as we baked…

“To buy a cake… to howl at the moon… to know true happiness… I am happy.”
― C. JoyBell C.

Today’s recipe is an Appple Cinnamon Loaf courtesy of a slightly adapted Mary Berry recipe that I found online this morning. What better way to spend the morning before going to the dentist, by baking sugary goodness cakes! So if you’re interested, here’s the recipe below..

1

Ingredients:

200g Self Raising Flour
75g Butter
100g Light Brown Sugar
1 Teaspoon ground cinnamon
4 Apples (Peeled, cored and sliced)
3 eggs (beaten)

Method:

Grease two loaf tins (or buy the awesome ones from Homebase that I mentioned the other day. Preheat the oven to 180 degrees c and get stuck in!

Place the flour and butter in a bowl and rub together until they resemble fine breadcrumbs. Then stir in the sugar and cinnamon.

Mix the apples in and add the eggs, beat until all ingredients are combined. Split your mixture between two loaf tins, be sure not to overfill them!

Bake in the oven for around 30 – 45 minutes until they have risen and are golden. Enjoy warm (because that’s the best way to have cake!)
