“To buy a cake… to howl at the moon… to know true happiness… I am happy.”
― C. JoyBell C.

Today’s recipe is an Appple Cinnamon Loaf courtesy of a slightly adapted Mary Berry recipe that I found online this morning. What better way to spend the morning before going to the dentist, by baking sugary goodness cakes! So if you’re interested, here’s the recipe below..

1

Ingredients:

200g Self Raising Flour
75g Butter
100g Light Brown Sugar
1 Teaspoon ground cinnamon
4 Apples (Peeled, cored and sliced)
3 eggs (beaten)

Method:

Grease two loaf tins (or buy the awesome ones from Homebase that I mentioned the other day. Preheat the oven to 180 degrees c and get stuck in!

Place the flour and butter in a bowl and rub together until they resemble fine breadcrumbs. Then stir in the sugar and cinnamon.

Mix the apples in and add the eggs, beat until all ingredients are combined. Split your mixture between two loaf tins, be sure not to overfill them!

Bake in the oven for around 30 – 45 minutes until they have risen and are golden. Enjoy warm (because that’s the best way to have cake!)

My Mother makes a legendary chocolate cake each year for various Birthdays and sprinkles many different types of chocolate and sweets on top. It has us all moaning afterwards at how sickly sweet it was (yet oh so yummy at the same time!) and packing the remaining cake off with whoever isn’t remaining at the house! (In this case, William!)

Fingers crossed it all works out – but it’ll mean less blogging and more concentrating! I also took an hour out this evening to work on the wedding photographs from Saturdays beautiful seaside themed wedding. They’ll be shared in the near future!
